Potato Soup

Ingredients

  • 1.5 lbs yukon gold potatoes
  • 5 slices bacon, sliced
  • 3 T bacon grease or butter
  • 1 onion, diced
  • 4 cloves of garlic, minced
  • 1/4 c all purpose (or gluten free) flour
  • 2 cups chicken or vegetable stock
  • 2 cups milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • Kosher salt to taste

Top with your choice of … bacon, cheese, chives, green onion, sour cream

Melt butter or cook bacon in a dutch oven

Transfer bacon to a separate plate

Add onion

Cook for 5 minutes on medium until soft.

Add garlic and cook for 1-2 minutes

Add flour and stir into onion & garlic mixture for 1-2 minutes

Add milk, potatoes and broth

Stir and cover for 15 minutes or until potatoes are soft.

Remember to stir occasionally to prevent scorching.

Remove from heat. Stir in cheddar cheese and sour cream

Add salt as desired.

Top with bacon or other toppings.
