Ingredients
- 2 tbsp olive oil
- 1 onions diced
- 6 garlic cloves, minced
- 29 oz black beans, drained
- 2 cups water or chicken broth
- 1 tsp chili powder
- ½ tsp dried oregano
- 1 bay leaf
- 1 tsp cumin
- 1 tsp salt
- ½ tsp black pepper
- 2 tbsp lemon juice
- 2 tbsp lime juice

Saute onion and garlic
Place a skillet over medium heat, add oil, then add onions and cook until translucent, approximately 4 – 5 minutes, stirring occasionally. Add garlic and cook for 30 seconds.

Simmer beans
Add black beans, water, chili powder, oregano, bay leaf, cumin, salt, and pepper and bring to a boil; reduce the heat and simmer for 15 minutes, until the mixture has thickened. Remove from the heat and add lemon and lime juice; serve and enjoy.
