Apple Walnut Salad with Chicken and Bacon

Recipe Adapted From: Apple Salad with Candied Walnuts and Creamy Poppy Seed Dressing

Indulge in a refreshing Autumn Harvest Salad that brings together crisp flavors and vibrant textures.

Ingredients

Salad

  • 1 small head romaine lettuce chopped
  • 6 oz spring mix
  • 2 oz arugula
  • 2 crisp pink apples slicked thinly or cut into bite size chunks (pink lady and honey crisp both delicious)
  • 6 slices bacon
  • 2 chicken breasts
  • Salt/pepper
  • 4 green onions
  • Dried cranberries
  • Feta cheese

Candied Walnuts

  • 1 c chopped walnuts
  • 1 tbsp salted butter
  • 1/4 c granulated sugar
  • 1/4 tsp ground cinnamon

Poppy Seed Dressing

  • 1/3 c mayo
  • 1/4 c milk
  • 3 tbsp sugar
  • 1 1/2 tbsp apple cider vinegar
  • 2 tsp poppy seeds

Make candied walnuts

Add the walnuts, butter, sugar, and cinnamon to a nonstick pan over medium heat. Cook, stirring constantly, until the sugar and butter are melted and coating the nuts, about 3 to 5 minutes.

Transfer to a baking sheet lined with parchment paper and separate to cool.

Make Salad Dressing

Whisk everything together in a bowl or dressing container

Make Bacon and Chicken

Fry bacon in pan as directed on package.

Season chicken with salt/pepper and then fry chicken in bacon fat.

Assemble Salad

Create your base with lettuce of choice – romaine or spring, add extra arugula.

Top with remaining salad ingredients.
