Banana Bread

Servings: 2 loaf pans

Ingredients

  • ⅔ cup shortening
  • 1 ½ cups sugar
  • 1 teaspoon vanilla
  • ½ teaspoon salt
  • 2 eggs
  • 1 cup mashed bananas
  • ½ cup chopped nuts (pecans or walnuts)
  • 2 cups flour
  • 1 teaspoon baking soda
  • ½ cup buttermilk (½ cup milk and 1 tablespoon vinegar)

Preheat Oven

350°

Mix

All ingredients. Note: Don’t mix until smooth. Lumps are ok in batter.

(To use butter in place of shortening, make sure it is cold and chopped up in pieces. Don’t soften or melt.)

If the bread is too dense or flat using butter, add 15% more butter next time OR add another 1/3 cup of banana.

Bake

Pour batter evenly into loaf pans.

Bake for approximately 1 hour–until toothpick pushed into center comes out clean.
