Indulge in a culinary masterpiece with this Creamy Mushroom Chicken. Sautéed chicken breasts, kissed with the richness of butter, mingle with the earthy notes of white mushrooms and the vibrant freshness of green onions. For an extra touch of sophistication, consider a splash of dry white wine.
Ingredients
- Avocado oil
- 2 chicken breasts
- 2 tbsp butter
- 4 green onions
- 8 oz white mushrooms
- Onion powder
- Garlic powder
- Salt
- Pepper
- 1/4 c dry white wine (optional)
- 2 c bone broth
- 1 tbsp thickener (arrowroot powder or tapioca starch)
- 1/3 c sour cream
Pairs well with rice or mashed potatoes and any veggies!

Prep food
Slice green onion whites and greens in separate piles.
Slice mushrooms.
Pat chicken dry and season with garlic powder, onion powder, salt, and pepper.

Cook chicken
Start by preheating a pan on medium/medium high heat.
Once hot, add avocado oil to pan.
Once oil is hot, add chicken. Cook until golden brown on each side. It’s ok if chicken isn’t fully cooked through, it’ll finish cooking when it’s simmering in the sauce.
Set chicken aside and let rest before cutting into strips or cubes.

Start gravy
Once chicken is removed, add 2 tbsp butter and allow to melt. Add onion whites and mushrooms. Sauté together for like 7-10 minutes until mushrooms are cooked as desired.
Be sure to use a wooden spoon and scrape the bottom of the pan the best you can. Those burnt bits add a ton of flavor to the sauce! Don’t worry if they don’t all come off with the veggies, they’ll come off more with the wine/broth,
If using wine, add in and allow to simmer down for a few minutes. Then add in chicken broth.

Simmer simmer
Once simmering, add chicken back in. Let simmer until chicken is fully cooked.
Mix together the thickener and a splash of room temperature or cold broth.
Mix thickener into gravy and whisk well.
Add in sour cream and mix well.
Serve on top of rice or potatoes and garnish with green onion greens.
