Fajita Marinade

This vibrant fajita marinade packs a perfect balance of tang, spice, and smoky depth. Fresh lime juice and a splash of water create a bright, tenderizing base, while garlic and a blend of bold spices infuse every bite with classic Tex-Mex flavor. Paprika and ancho powder lend a rich smokiness, complemented by chili and onion powders for warmth and depth. A hint of oregano and cumin adds earthiness, while salt, black pepper, and chili flakes round out the seasoning with just the right kick.

Ingredients

  • 3 tablespoons oil
  • 1/4 cup lime juice
  • 1/4 cup water
  • 6 cloves garlic minced
  • 1 tablespoon paprika 
  • 1 tablespoon ancho powder
  • 1 teaspoon chili powder
  • 1 teaspoon onion powder
  • 1 teaspoon oregano
  • 1/2 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Chili flakes to taste

Marinates chicken, shrimp, steak, or other favorite proteins

Whisk

Whisk all of the ingredients together in a large bowl until consistent.

Let sit for at least 30 minutes, overnight for more flavor.

Sous vide strip steak 2.5 hours on 135, then sear on hot Blackstone or pan.
