Meatball Ingredients
- 1 lb. Ground Beef
- 1/2 Cup Bread Crumbs
- 1 1/2 Tbsp Ginger Sauce
- 3 Tbsp Coconut Aminos
- 3-4 Scallions
Sauce Ingredients (also here)
- 1/4 Cup Mayonnaise
- 1/4 Cup Sour Cream
- 4 Tsp Coconut Aminos
- 4 Tsp Honey
- Sriracha to taste (about 1/4 cup)

Prep
Pre-heat oven to 425 degrees.
Trim and thinly slice scallions, separating whites from greens. Mince whites.

Make Firecracker Sauce
In a large bowl, combine mayonnaise, sour cream, honey, soy sauce, and sriracha.

Cook Rice
Cook rice however you like it.

Make Meatballs
Combine ground beef, bread crumbs, scallion whites, ginger, soy sauce, salt and pepper.
Form into 10-12 Meatballs, and place on a baking sheet. Bake for 14-16 minutes, or until cooked through.

Roast
Bake for 14-16 minutes, or until cooked through.
Can also cook green beans on same baking sheet.

Finish and Serve
Add rice, meatballs, and green beans to plate. Drizzle with as much firecracker sauce as you desire.
