Gluten Free Cinnamon Rolls

Ingredients

for the rolls:

  • ¼ cup butter
  • 1 cup whole milk
  • 1⁄3 cup + 1 Tablespoon sugar, divided
  • 1 packet active dry yeast
  • 1 large egg, whisked
  • 2 ½ cups gluten free 1:1 flour blend
  • 2 teaspoons baking powder
  • ¼ teaspoon salt

for the filling:

  • ½ cup sugar
  • 2 Tablespoons cinnamon
  • 1⁄3 cup extremely soft butter

before baking:

  • ~½ cup heavy cream
  • splash of vanilla

Recipe

Melt Butter

Add milk and 1 tablespoon of sugar to 110°

Mix in Yeast

let sit for ~10 minutes, or until foamy

add whisked egg + 1⁄3 cup sugar

gently combine

Mix Dry Ingredients

Add dry ingredients to wet ingredients in 2 batches

Cover and Proof

in a warm oven or in the sun for 1 hr until the dough doubles

Grease

your baking dish and a sheet of parchment paper

Roll Out

the dough to a rectangle 1/4 inch thick

Spread

softened butter over the dough

shake cinnamon sugar mixture over the dough until covered

Roll

the dough into a log using the parchment paper

Use unscented floss or a sharp knife to cut into rolls

Place in baking dish

Proof

for 30-40 minutes in a warm oven or sunny place

Preheat Oven

to 350º (you can do this in the remaining 10 minutes of the proof time with the rolls inside)

Mix Together

heavy cream and sugar

Pour over the cinnamon rolls until covered

Bake

for 15-20 minutes, or until golden brown

wait 15 minutes to cool, then add your icing of choice!
