Korean Cucumber Salad

A simple light Korean cucumber side dish that’s like a salad. Very light seasoning allows the cucumber flavor to stand out.

Ingredients

  • 1 1/2 cups sliced cucumber
  • 1 tbsp coconut aminos
  • 2 tbsp rice vinegar
  • 1/2 tbsp sugar
  • 1 tbsp of chili onion oil
  • sprinkle of sesame seeds
  • 2 green onions, chopped

Pairs well with Korean beef

Slice cucumbers

Slice cucumbers into thin slices.

Mix sauce

Mix coconut aminos, vinegar, onion chili oil, and sugar in a bowl. Pour amino vinegar into the bowl with cucumbers.

Add onion

Add chopped onion.

Let sit

The longer the cucumbers sit in the sauce, the more pickled they are. At least 30 minutes but can go days.
