Ingredients
- 12 mancicotti
- 2 lbs ricotta or cottage cheese
- 1/4 lb motzerella, shredded
- 1/2 c romano or Parmesan cheese
- 2 eggs, slightly beaten
- 1/8 c parsely, chopped
- 2 jars sauce
- 1 c water
Recipe
1
Preheat Oven
Pre-heat oven to 350 degrees.
2
Cook Manicotti Shells
Cook the manicotti shells according to the package instructions. Ensure they are cooked to al dente as they will continue to cook in the oven. Once done, drain and set aside.
3
Prepare the Filling
In a large mixing bowl, combine ricotta or cottage cheese, shredded mozzarella, grated Romano or Parmesan cheese, slightly beaten eggs, and chopped parsley. Mix well until all ingredients are evenly incorporated.
4
Stuff the Manicotti
Using a spoon or a piping bag, stuff each manicotti shell with the cheese mixture. Be careful not to overfill, but ensure they are well-stuffed.
5
Arrange in Baking Dish
In a baking dish, spread a thin layer of pasta sauce. Place the stuffed manicotti in the dish.
Pour the remaining pasta sauce over the stuffed manicotti, ensuring they are fully covered. Add 1 cup of water to the sauce to facilitate the cooking process.
6
Bake
Cover the baking dish with aluminum foil and bake in the preheated oven for about 30-40 minutes or until the manicotti is tender and the filling is hot and bubbly.
