Pickled Red Onions

Ingredients

  • 1/4 cup hot water
  • 2 tsp salt
  • 2 tsp sugar
  • 3/4 cup white vinegar
  • 1 large red onion (or 2 small ones)
  • 6 or so peppercorns
  • 3 garlic cloves or scoop of jarlic

Pairs well with greek chicken bowls, salads, sandwiches, wraps

Dissolve

Mix hot water, sugar and salt until dissolved.

Slick Onions

Thinly slice onions. I carefully use a mandolin. If the chunks are getting hard to cut, save them and put them into a chopped salad.

Marinate

Let onions sit for at least one hour, the longer the better.
