Quinoa Tabbouleh

Ingredients

  • 3ish cooked cups of quinoa (you can use less or more)
  • 1 cucumber, diced
  • 1 package grape or cherry tomatoes, quartered
  • Juice from 1 lemon
  • A couple drizzles of olive oil
  • ¼ cup chopped parsley
  • ~1 tablespoon of chopped mint
  • 1 bunch of green onions, just the green parts
  • Salt and pepper to taste

Could add feta if you want!

Cook the Quinoa

According to package directions, let cool

All ingredients together, add salt until it tastes right
