Kathan: Mariah
Ingredients
- 3ish cooked cups of quinoa (you can use less or more)
- 1 cucumber, diced
- 1 package grape or cherry tomatoes, quartered
- Juice from 1 lemon
- A couple drizzles of olive oil
- ¼ cup chopped parsley
- ~1 tablespoon of chopped mint
- 1 bunch of green onions, just the green parts
- Salt and pepper to taste
Could add feta if you want!

Cook the Quinoa
According to package directions, let cool

Mix
All ingredients together, add salt until it tastes right
