Ingredients
- 2 pounds baby Yukon gold potatoes
- 3/4 cup + 2 tablespoons apple cider vinegar
- 1 tbsp kosher salt
- 1/2 cup extra virgin olive oil
- 2 tsp onion powder
- 1-2 cloves garlic, minced or grated
- Pepper, to taste
- 3/4 cup grated high-quality sharp white cheddar cheese
- 2 tbsp chives, minced
Pairs well with … cottage cheese
Recipe

Preheat Oven
Preheat oven to 450°

Put potatoes, 3/4 cup of vinegar, salt in large pot
Cover with 2 inches of water
Bring to a boil, then reduce heat and simmer for 15 minutes.

Drain Potatoes
Transfer to a baking pan
Let cool

Smash Potatoes
by putting another baking pan atop the other one and pushing down.

Toss
with garlic, onion powder, olive oil, salt and pepper

Roast Potatoes
25–30 minutes, until golden brown
Toss again with 2 tbsp of vinegar and chives
