Makes 2 Loaves
Ingredients
- 2 Tsp active dry yeast
- 2 Cups warm water
- 1/4 Cup honey
- 5-6 Cups unbleached flour
- 2 Tsp salt
- 1/4 Cup unsalted butter, melted

Combine
In the bowl of a stand mixer, with dough hook attached, mix yeast, honey, and water. Cover with a towel, and let sit for 10-15 minutes, or until foamy.
Once foamy, add melted butter, salt, and flour. Mix well. You will know you have enough flour when the dough doesn’t stick to the side of the bowl, and the dough is tacky to touch but doesn’t stick to your fingers.
Knead for 5 minutes on low.

Let Rise
Remove dough hook, and cover dough with towel. Allow to rise for an hour, or until about doubled in size. This may take longer if kitchen is cold.
After an hour, punch down center, and turn out onto a lightly floured surface. Separate dough into 2 equal parts, shape and place in loaf pans.

Second Rise
Cover loaf pans so dough doesn’t dry out. Let rise for another hour.

Bake
Pre-heat oven to 360 degrees.
Bake bread for 40 minutes.
Bread is best consumed within 5 days, or can be refrigerated/frozen for longer life.
