Tater Tot Breakfast Casserole

Tater Tot Breakfast Casserole is a savory and indulgent dish that combines the classic appeal of crispy tater tots with a flavorful medley of vegetables, eggs, and melted cheeses. This breakfast delight is not only visually appealing but also a crowd-pleaser with its rich and satisfying taste.

Ingredients

  • 1 32 oz bag of frozen tater tots
  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 5 cloves garlic, pressed (or more, measure with your heart)
  • 1 block freshly grated sharp cheddar cheese
  • 1 block freshly grated pepper jack cheese
  • 8 large eggs
  • 2 cups half-and-half
  • 4 oz diced green chilies
  • 1 tsp dried parsley
  • 1/2 tsp paprika
  • 1/2 tsp dried oregano
  • 1/2 tsp salt
  • 1/2 tsp pepper

Preheat Oven

Pre-heat oven to 350 degrees.

Spray 9×13 baking dish with avocado oil.

Prep

Cook meat if you’re adding it. Bacon and sausage are both amazing.

Saute onions and peppers until cooked through and onions are softened. Add garlic and sauté for another 30 seconds. If cooking meat you’ll add this to the meat after you’ve browned/cooked it.

Start the layers

Mix eggs and seasonings together (parsley, paprika, oregano, salt, and pepper).

In your greased pan, add 1/2 the tater tots as your base.

Add the veggies, chilis, and 1/2 the cheese. Stir to combine.

Pour egg mixture. Then sprinkle the remaining tater tots.

Bake

Bake uncovered at 350 for 70-80 minutes or until eggs are hot. Remove from the oven and sprinkle with remaining cheese. Return to the oven and bake an additional 5-10 minutes until the cheese is melted and crisped a bit.

Remove from oven and sprinkle with chopped chives or green onions if you like.
