Tortellini Vegetable soup

Ingredients

  • 3 Tbsp Oil
  • 1 Cup chopped onion
  • 1 Cup chopped celery
  • 3- 10 oz Cans beef broth + 3 cans of water (30 oz broth, 30 oz water)
  • 1- 28oz Can of tomatoes
  • 1 Cup baby carrots
  • 1 Cup chopped potatoes
  • 1 Tsp dried basil leaves
  • 1 Tsp thyme leaves
  • 1/2 Tsp dried chives
  • 1 Cup corn
  • 1 Cup green beans
  • Grated romano or parmesan cheese.

Saute

Place oil in a large stockpot and saute onion and celery.

Add broth, tomatoes, carrots, potatoes, basil, thyme, chives, and corn. Bring to a boil.

Simmer

Reduce heat and stir in beans and tortellini.

Cover and simmer for 30-45 minutes.

Serve

Sprinkle cheese on top, and serve.
