Greek Chopped Salad

Ingredients

  • 1 seedless cucumber
  • 1 medium red onion
  • 1 container cherry tomatoes
  • 1 can chickpeas
  • Lemon juice
  • Salt
  • Garlic
  • Dill (optional)

Pairs well with shawarma chicken, pickled red onions, rice, salad

Chop veggies

Chop veggies into uniform pieces. I use a veggie chopper with the smallest attachment.

Mix and Sit

Mix veggies, a scoop of jarlic (or chopped garlic), a good pinch of salt, a sprinkle of freeze dried dill, and a drizzle of lemon juice and mix to combine. Let sit for an hour for best results.
